Fully matured in a now exceptionally rare thick staved 50 year old Para Vintage Tawny (Australian Port) cask from Seppeltsfield in the Barossa Valley. The cask has been toasted and heavy charred.
Availability of this timber is super scarce and word is there may only be a 20L cask left (for the very forseeable future)

Distillery Tasting Notes
Nose: Figs, buttered toast, spiced pear and celery with an undercurrent of white pepper
Palate: Rich plum sauce, fudge, rhubarb spiced crumble and demerara sugar. A very slight hint of charred oak.
Finish: Oily, long with slightly drying middle but moreish. Soft.

Palate: Sticky date pudding topped with candied orange peel & drizzled with charred, salted caramel sauce
Finish: Oily & sweet with touches of vanilla, citrus zest and rock salt
