Full rum cask maturation, which is a first for the distillery.
The rum cask has been on quite a journey. It was initially a bourbon cask, previously containing Buffalo Trace, before making its way to Beenleigh Artisan Distillery - one of Australia’s oldest liquor brands - to age some rum. The cask finally headed to the Tasmanian Cask Company to re-cooper into a small format cask.
Spirit driven, this whisky benefits from plenty of time in the glass.

Distillery Tasting Notes
Nose: Sugar cane straw, caramel, toasted coconut, dried apricot, and shaved oak
Palate: Rich and mouth filling with brown sugar, more dried apricot transitioning into dryer oak and spice
Finish: Nice dry finish with plenty of oak and mixed spices.
Our Tasting Notes
Nose: Straw bales and cut grass before, with time in the glass, vanilla bean, white chocolate and lavender come to the fore
Palate: Floral and herbaceous upfront before unripe banana fudge kicks in with a hint of juicy fruit gum.
Finish: Mentos and white pepper, just a touch of grapefruit, and a lingering, underlying fudgey sweetness
